Scotch Eggs

6 boiled eggs (peeled & cooled)

1 large roll breakfast sausage or 2 small rolls

1 jar dijon mustard

1/2 can Italian style bread crumbs

1 cup shredded parmesan cheese

Cajun spice to taste

Wrap boiled eggs in sausage. Brush with dijon mustard, roll in mixture of bread crumbs and parmesan cheese. Bake at 400 for 35 minutes or until juices are clear
